The interior uses some clever tricks to fool your eyes. From afar, the décor seems to be entirely monochrome with white floors and tables. The room, cups and plates are all illustrated in black and white, leaving only our customers, food and beverages in color recreating a romantic notion of being a part of a fairytale.

En medio de varias hectáreas de terreno preservado en el borde de Isle, uno de los afluentes del Dordoña, en Montpon-Ménestérol, cerca de Burdeos, la Manufactura Prunier continúa con su herencia tradicional produciendo su caviar en un entorno totalmente controlado.

Para obtener un caviar “perfecto”, la Manufactura cría dos esturiones: el acipenser baerii y el acipenser gueldenstaedtii. Transformar estos huevos en caviar requiere una cuidadosa preparación según un saber hacer desarrollado hace 100 años por la casa Prunier.

1 . Prunier es uno de los principales productores de caviar del mundo

La Manufactura Prunier es la única granja en Francia que cría sus esturiones a partir de sus propios alevines y produce su propio caviar vendido bajo su marca.

2 . En 1994, la Manufactura Prunier se convirtió en el primer productor en obtener caviar de esturiones de piscifactoría.

Creó una alternativa sostenible y segura para las especies en peligro de extinción en el Mar Caspio. Hoy en día, el proceso de selección del grano, así como las recetas de la Manufactura Prunier, permiten elaborar caviares con sabores muy diferentes.

To obtain a “perfect” caviar, the Manufacture breeds two sturgeons: the acipenser baerii and the acipenser gueldenstaedtii. Transforming these eggs into caviar requires careful preparation according to a know-how developed 100 years ago by the Prunier house.

Restaurante La Milla, secuencias del Atún Rojo en Marbella

El Restaurante La Milla es uno de los locales más privilegiados de Marbella, en la misma playa y en la mejor ubicación se ha convertido en una de las terrazas más deseadas de la costa marbellí.

Y no es de extrañar, todo se ha cuidado al máximo en este local, desde su decoración que te invita a vivir, comer y beber mirando al mar, a su atención al cliente de autentico lujo. En días claros se puede ver la costa marroquí al otro lado del Estrecho de Gibraltar.

Luis Miguel Menor, propietario y chef ejecutivo, es el responsable de la cocina de este idílico espacio gastronómico. Luismi estudió en la Asociación de Cocineros de La Costa del Sol, se fraguó profesionalmente en Le Nailhac, restaurante del Hotel Byblos*****, en Mijas, donde trabajó durante 8 años. En ese tiempo la Revista Gourmet le consideró en 2006 como uno de los segundos de cocina más importantes del país. En 2012 siendo chef ejecutivo coincidió con César Morales en el Hotel Los Monteros y juntos empezaron a idear un proyecto de crear un chiringuito, en 2015 nació La Milla Marbella.

César Morales, propietario y director de F&B es el compañero y socio de Luis Miguel, inició su formación en la escuela internacional de Les Roches Marbella. Trabajó en la cadena de hoteles Radisson en Londres y Rafael hoteles en Baqueira-Beret. Al regresar a Málaga decide especializarse en Dirección de Alimentos y Bebidas a través del Caledonia Golf Resort y del Santa María Golf Club. Posteriormente obtuvo el puesto de Director de Alimentos y Bebidas en el Hotel Guadalmina****, y fue en el Hotel Don Carlos***** donde alcanza el nivel profesional que esperaba. Su siguiente paso le lleva a ser Director de Alimentos y Bebidas Corporativo en el Hotel Los Monteros 5*GL, con Luis Miguel Menor emprende el proyecto de La Milla.

Con una estimulante cocina estudiada para el cálido clima de Marbella, su chef es un entusiasta del Atún Rojo Balfegó por su calidad y sabor, son muchos los platos que el cocinero ha creado con el gran túnido. Empezar con una Variedad de tomates, conserva de atún brasa y crema de ajo confitado es una buena idea que nos abrirá el apetito y refrescará.

Un internacional Brioche con mantequilla noisette, atún rojo y chocolate blanco es una de las nuevas creaciones de Luis Miguel, sorprendente combinación con punto dulce que viste el lomo de atún con nuevos sabores.

Tour por Tokio con el arquitecto Kengo Kuma

Este tour no es un tour cualquiera, se trata de una experiencia exclusiva de la mano de Kengo Kuma, reconocido como uno de los más importantes arquitectos japoneses de la actualidad. En 1987 fundó en Tokio el Spatial Design Studio (ahora llamado Kengo Kuma & Associates) y en 2008 llevo a cabo la apertura de su estudio en París. Nadie mejor que Kengo Kuma para mostrar e interpretar edificios icónicos de Tokio como el Nuevo Estadio Nacional de Japón, el Museo Nezu, el Foro Internacional de Tokio y SunnyHills, entre otros.

Estancia en el templo de Ninna-ji

El templo Ninna-ji es un gran complejo de 80 hectáreas ubicado en la ciudad de Omuro, al norte de Kioto. Fundado en el año 888, tiene una estrecha y profunda conexión con la familia imperial, cuyos miembros sirvieron como sacerdotes durante muchas generaciones. Este edificio declarado Patrimonio de la Humanidad por la UNESCO permite la estancia de huéspedes en una villa privada situada en los terrenos aledaños. Una vez el espacio del templo cierra sus puertas a los visitantes, los afortunados huéspedes gozarán de un recorrido guiado por un monje. Así se tendrá la oportunidad de disfrutar del monumental templo y experimentar las actividades que realizaban sus sacerdotes en la antigüedad como el ikebana (arreglos florales), el gagaku (música y danza tradicional japonesa), el noh (música y danza tradicional japonesa), nogaku (obra de teatro Noh) y sado (ceremonia del té). Además, este no es el único edificio histórico donde se puede pasar la noche, también existe la posibilidad de hospedarse en castillos, como es el caso del castillo de Ozu o de Hirado.

El recipiente prototipo que se ha elaborado conjuntamente es diferente a cualquier botella de whisky en la historia. El diseño único desafía la estética vertical tradicional de una botella de whisky y refleja la trayectoria horizontal de un automóvil, empujando los límites y el arte de lo posible. En consecuencia, la embarcación se asienta horizontalmente en una cuna especialmente diseñada y no tiene una base permanente.

En el centro del diseño se encuentra una botella de vidrio hecha a mano con un extraordinario giro de 180 grados, que representa el dominio del espacio y el tiempo logrado por The Macallan y Bentley Motors al crear el prototipo.

Luego, la embarcación está rodeada por una estructura 3D intrincadamente retorcida fabricada en un conjunto de hermosos materiales sostenibles. Los brazos de la estructura están elaborados en:

In homage to The Macallan’s acclaimed Six Pillars – the foundation stones of the brand that account for its distinctive single malt whiskies – The Macallan Horizon incorporates six unique upcycled, repurposed or ethically sourced materials which are integral to The Macallan and Bentley Motors.

A Harmony of Six Key Sustainable Materials

The prototype vessel that has been jointly crafted is unlike any bottle of whisky in history. The unique design defies the traditional vertical aesthetic of a whisky bottle and reflects the horizontal trajectory of a car, pushing the boundaries and the art of the possible. Accordingly, the vessel sits horizontally in a purpose-build cradle, and has no standing base.

At the centre of the design is a hand-made glass bottle with an extraordinary 180-degree twist, representing the mastery of space and time achieved by The Macallan and Bentley Motors in creating the prototype.

The vessel is then surrounded by an intricately twisted 3D structure crafted in a suite of beautiful, sustainable materials. The arms of the structure are crafted in:

  • Recycled copper from the disused, curiously small spirit stills which were located within The Macallan’s former distillery
  • Aluminium recovered from the production of the Continental GT, Flying Spur and Bentayga at Bentley’s home in Crewe, England
  • Recycled wood from both brands
  • The world’s lowest CO2 leather, locally-sourced in Scotland, and also used in the highly exclusive Bentley Mulliner Batur grand tourer unveiled yesterday

The final component will be the extraordinary single malt whisky being crafted for the release, which will also tell its own story of recycling and sustainability.

When we looked at the horizontal direction pursued by Bentley Motors as part of the automotive industry, it made us consider if and how we could adapt this format for whisky, which ultimately requires to be poured.
